Cauliflower Cake

  1. Preheat oven to 180˚C
     

  2. Cut Cauliflower into small florets with some stem remaining, cook in a boiling pot of water. Once cooked drain and set aside
     

  3. In a bowl beat eggs until thick, add oil and mix
     

  4. In a seperate bowl sift flour, baking soda, and cinnamon into a bowl, then add sugar 
     

  5. Add dry ingredients to egg mixture
     

  6. Fold in cauliflower and pineapple and spoon into a lined 23cm tin
     

  7. Place in preheated oven and bake for 40 minutes. Remove from oven and leave for 10 minutes before turning out the cake
     

  8. When cold dust with icing sugar and serve with a spoonful of whipped cream or yoghurt
