Cauliflower Cake

Preheat oven to 180˚C
-
Cut Cauliflower into small florets with some stem remaining, cook in a boiling pot of water. Once cooked drain and set aside

In a bowl beat eggs until thick, add oil and mix

In a seperate bowl sift flour, baking soda, and cinnamon into a bowl, then add sugar
-
Add dry ingredients to egg mixture
-
Fold in cauliflower and pineapple and spoon into a lined 23cm tin
-
Place in preheated oven and bake for 40 minutes. Remove from oven and leave for 10 minutes before turning out the cake
-
When cold dust with icing sugar and serve with a spoonful of whipped cream or yoghurt
