Italian Vegetables

1. Cut all vegetables into bite sizes 

 

2. Mix balsamic vinegar, olive oil, thyme and extra garlic together. Add mixture to roast vegetables and toss

 

3. Pour vegetables into a roasting pan add freash rosemary and roast till cooked

 

4. Roast walnuts for 1 minute on high on stovetop

 

5. Mix all pesto ingredients and roasted walnuts in a mixer to combine

6. Serve roasted vegetables with walnut pesto
